Tomato soup
A roasted tomato soup that has an incredible flavor and that today we accompany with the most delicious melted cheese sandwich. A winning combination that you will fall in love with.
Ingredients
- 2 kg red tomatoes
- 200 ml extra virgin olive oil
- 1 bunch of fresh basil
- 1 bunch of fresh thyme
- salt
- pepper
- 2 onions
- a tablespoon of Modena vinegar
- 2 cloves of garlic

60 g grated cheese
Preparation
Preheat the oven to 185 degrees
Wash and cut the tomatoes in half. Place them face up on a baking sheet and season with salt and pepper. Drizzle a little extra virgin olive oil. We turn them over and season with salt and pepper again. Add a few basil leaves and bake for 30-40 minutes until well roasted.
Chop the onion and garlic cloves. In an Efficient saucepan, add 2 tablespoons of extra virgin olive oil and sauté the onion and garlic over medium-low heat for at least 10 minutes until the onion is tender.
Then add the vinegar and the tomatoes with all the water they have released. Increase the heat to medium-high and sauté for about 5 minutes until everything is combined.
Add a bunch of fresh basil and, with the help of a food processor or a hand blender, blend until obtaining a smooth and fine texture.
Butter two slices of bread. Fill with grated cheese and fry in a frying pan until golden brown. Add a couple of tablespoons of water and cover. This will make the cheese melt completely.
Serve the tomato soup piping hot with the melted cheese sandwich.
