Stewed cuttlefish with potatoes and peas
This is one of the easiest and quickest recipes to make, but at the same time very delicious. Perfect stew to receive guests and have everything ready. It will surprise you. Preparation time: 40 min.
Ingredients for 4 people):
300 g fresh cuttlefish
700 g potatoes
300 g fresh peas
1 spring onion
½ glass of white wine
Salt
Pepper
Extra virgin olive oil
For the bite:
2 small toasts
10 toasted almonds
2 sprigs of parsley
1 clove garlic
1 Peel the onion and cut it into thin wedges (julienne). Peel the potato and cut it into large cubes. Cut the cuttlefish into medium dice.
2 In a saucepan with olive oil, fry the cuttlefish over high heat for 1 minute, add the onion and potato, the white wine and finally the peeled peas. Season, cover and cook for 25-30 minutes over medium heat. If it is very dry, add a glass of water.
3 Peel the garlic and almonds. In a mortar, mash the garlic, the peeled almonds, the toast and the parsley leaves. Add to the preparation 3 minutes before turning off the heat. Let stand 5 minutes and serve.
