Bomb Potatoes
These potatoes are a bomb in your mouth. Soft on the inside, crispy on the outside and full of flavor and they are so easy to prepare that you will make them again and again.
Ingredients
- 1.5 kg of potatoes
- 150 ml olive oil
- 1 head of garlic
- 3 tablespoons of spicy oil
- 1 tablespoon tamari or soy sauce
- 1/2 tablespoon honey
- 1/2 tablespoon vinegar
- a sprig of rosemary
Preparation
We grease a baking tray and put it in the oven at 220ºC.
Peel and cut the potatoes into medium wedges. We boil them for about 10 minutes until they are tender.
We drain them and return them to the saucepan and move them vigorously so that they crush each other. Add a little oil and season with salt and pepper and stir in the same saucepan without touching the potatoes until they are all lightly covered with oil.
We put the potatoes with the head of garlic on the baking tray and bake for about 50 minutes, moving them every 15 minutes so that they are well browned on all sides. After 40 minutes, we remove the head of garlic and continue with the potatoes in the oven for 10 more minutes.
We make a mixture of honey, soy sauce, spicy oil and garlic that we will squeeze directly. We make a paste. When the potatoes are ready, pour the sauce, stir well and enjoy.
We serve accompanied by homemade mayonnaise.
