chicken durum
We know that there are many ways to make a homemade chicken dürüm, so today we want to bring you a new version with an Arabic touch that will drive you crazy.
Ingredients:
2 chicken breasts (650 g)
Spring onion
Romaine lettuce
Tomato
For the yogurt sauce:
125 g plain Greek yogurt
1 tablespoon mayonnaise
Juice of 1/2 lemon 1/4 garlic
Chopped fresh parsley or cilantro
Extra virgin olive oil
Black pepper to taste
Salt to taste
For the marinade :
1 1/2 teaspoons ground cinnamon
1 teaspoon ground cumin
2 teaspoons ground cilantro
1 teaspoon ground black pepper
1/2 teaspoon ground cardamom
1/8 teaspoon ground cloves
Extra virgin olive oil Salt to taste
Preparation:
The first thing we are going to do is marinate the chicken. To do this, we start by putting all the spices in a bowl and mixing.
We add a splash of oil and stir well.
Cut the breasts into strips and add the chicken to the spice mixture, mix well to ensure that all the chicken is coated with the spices and oil, and set aside in the refrigerator overnight.
The next day we prepare the yogurt sauce by pouring the yogurt into a bowl, adding the mayonnaise, chopped cilantro, black pepper to taste, salt to taste, lemon juice, a little minced garlic and extra virgin olive oil. We stir well and reserve in the refrigerator.
We cook the chicken in a very hot pan, it is not necessary to add any fat, the fat in the chicken is enough.
To make our dürum we need a large wheat tortilla, we put some previously washed and drained romaine lettuce, a few slices of tomato, julienned onion and a good amount of chicken.
We add yogurt sauce and roll up the dürum.
We put it on a griddle with the closure side down and brown it on all sides. The tortilla will be tender and crunchy at the same time. Crazy!
