Beef rolls stuffed with vegetables with sauce
In cooking, flavor is always the most important thing. But we cannot forget that the presentation, the way of preparing it so that the dish is beautiful, is also important. Here I leave you these rolls that can be prepared with the meat or fish fillets that you most fancy.
Preparation time: 40 min.
Ingredients for 4 people):
8 thinly cut beef steaks.
50 g of fresh mini spinach.
1 spring onion.
100 g of mushrooms.
2 carrots.
1 tablespoon old-fashioned mustard.
Salt.
Pepper.
Extra virgin olive oil.
For the sauce:
250 ml of beef broth.
30 cl of sweet sherry.
2 teaspoons of cornstarch.
1 teaspoon old-fashioned mustard.

1 Peel the onion and carrot, clean the mushrooms and chop them. Wash the spinach. Heat 2 tablespoons of oil in a frying pan and fry onion and carrot for 5-6 minutes. Add the mushrooms and continue sautéing until tender. Season with salt and pepper, add the spinach, stir a few times and remove from the heat.
2 Spread the meat fillets on the work surface, season with salt and pepper and spread lightly with mustard. Distribute the prepared vegetables on top. Roll up and tie with twine.
3 In one of the double frying pans with olive oil, brown the rolls over high heat for 1 minute on each side. Cover with the other pan, lower the heat and cook for 5 more minutes.
3 Open the pans and cook the sauce in the top one: add a teaspoon of mustard, add the beef broth and wine and let it reduce for about 5 minutes. Add a pinch of salt and thicken with corn flour diluted in 2 teaspoons of water. Serve the rolls immediately, cover with the prepared sauce and accompany with a little rice, pasta or potatoes.
