Cerdenyan Minestrone Soup
They say that this is the soup of longevity, since it is native to Cerdenya, an area where centenarians live and its inhabitants have a great quality of life. Could this soup be your secret? We leave you the recipe in case you want to include it in your weekly menus and enjoy it.
Ingredients:
1 onion
1 stick of celery
2 carrots
2 potatoes
4 tomatoes
2 cloves of garlic
200 gr cooked white beans
1 glass of white wine
Pepper
Salt
Fresh parsley
fresh basil
Pasta
Parmesan or pecorino
Steps:
1. Chop the onion, celery and carrots.
2. With a good splash of oil we fry them.
3. While we peel and cut the tomatoes and potatoes.
4. When the onion begins to brown, add the wine and let it cook for about 10 minutes over medium heat. We add the tomatoes and the spices and stir. We leave it on medium heat for about 15 minutes.
5. Add the potatoes, peeled garlic, beans and broth (or water), let it boil for about 20 minutes. We add the pasta and let it cook.
6. We serve on the plate and add a tablespoon of grated cheese.
