Shepherd's pie (Cottage pie) Vegetable
Ingredients:
2 onions
1 tray of mushrooms
3 carrots
1 cup peas
Rosemary
Thyme
2 tbsp tomato sauce
2 tbsp flour
1 splash of red wine
300 ml vegetable broth
3 potatoes
1 soy yogurt
Oil
Mozzarella cheese (or vegetable cheese)
Steps:
- 1 Peel the potatoes and boil them until soft. Strain the potatoes.
- 2 Mix the potatoes with the yogurt and olive oil, salt and pepper and blend.
- 3 While the potatoes are cooking, peel and cut the onions, carrots and mushrooms into small pieces.
- 4 Add a little oil to the pan and sauté the onion. When the onion is soft, add the carrots, mushrooms and fresh herbs (rosemary and thyme).
- 5 Stir for a few minutes. Add the flour and tomato sauce. Stir.
- 6 Add the red wine and cook for 5 minutes. Add the vegetable broth and stir over medium heat, season with salt and pepper.
- 7 Add the peas and raise the heat to boil for a few minutes. Then lower the heat to a gentle simmer and let it simmer until the vegetables are cooked.
- 8 Remove the thyme and rosemary and add the mashed potatoes on top.
- 9 Bake until gratinated.
