Ingredients
for the sausages
1/2 kg of fresh pork sausages
2 onions peeled and thinly sliced
2 tablespoons olive oil
2 tablespoons soft brown sugar
a little chopped thyme
200 ml of red wine
a bunch of chopped parsley
For the mashed potatoes
500 g French fries (small)
50g of butter
50g extra virgin olive oil
Salt to taste
freshly ground black pepper
a bit of nutmeg
Preparation
In an Eterna saucepan, fry the sausages until they are well browned. Transfer to a plate and remove.
Add the sliced onions and olive oil. Add the sugar and thyme and cook well for 5 minutes over medium heat until the onion is caramelized.
Add the wine and move well. Add the sausages and a little salt and pepper. Let boil for 5 minutes so that the alcohol evaporates.
Lower the heat and cook for another 10 minutes until the sauce has thickened slightly and sprinkle the finished dish with parsley and serve.
For the purée, cook the potatoes in plenty of salted water in an Eterna saucepan. When they are tender, peel them and grind them until you get a fine puree.
Add the butter, nutmeg to taste and season with salt and pepper. We mix again.
We serve the sausages accompanied by the mashed potatoes with a little of the sauce on top.
