Baked chicken
Baked chicken with potatoes is a classic at home, especially on Sundays. It is a
very easy recipe to prepare, it practically makes itself and everyone likes it.
Ingredients:
4 chicken thighs and drumsticks
6 small potatoes, Kennebec variety
7-8 shallots
1 piece of pumpkin
6 garlic cloves
100 ml of white wine
200 ml chicken broth
Fresh rosemary
Extra virgin olive oil
Black pepper
Salt
Preparation:
We start by cutting the potatoes into irregular pieces that we are going to add
directly onto our Efficient oven tray . Then we put the
peeled shallots and a piece of pumpkin, peeled and cut into cubes the size of the
potatoes. Crush the garlic and put it in the tray. Season to taste, add a little
a splash of extra virgin olive oil and stir. Pour in about 100 ml of
white wine.
Season the chicken pieces with salt and pepper to taste and place them on top of the potatoes.
We pour a little oil on the chicken and massage it. Finally, we pour the
chicken broth. We put some sprigs of fresh rosemary and in the oven, which we have
preheated to 180 ºC with heat above and below. We bake for 1 hour and 30
minutes.
Halfway through the cooking time we turn the chicken thighs over so that they are
brown on the other side. And when there are 15 minutes left, we turn them over again
lap.
If you want to have a little broth left, you can add broth during the cooking.
