Chickpea curry: comforting and full of flavour

Ingredients:
- 1 red onion
- 2 cloves of garlic
- Fresh ginger to taste
- ½ red pepper
- 1 tablespoon curry
- ½ teaspoon cumin
- ½ teaspoon paprika
- Salt to taste
- 1 carrot
- 400 g cooked chickpeas
- 400 ml coconut milk
- 400 ml of vegetable broth
Preparation:
- In the Efficient saucepan , fry the onion until soft. Add the garlic, grated ginger and red pepper, and cook for a few minutes until fragrant.
- Add the spices and sauté briefly to enhance their flavors.
- Add the tomato and cook over medium heat for 10 minutes, allowing it to reduce slightly.
- Add the chopped carrot, chickpeas, vegetable broth and coconut milk. Bring to the boil and simmer for 20 minutes, until the flavours blend perfectly.
- Serve piping hot, accompanied by basmati or brown rice, and enjoy every spoonful.
