Tortilla Fill
When we think of making an omelette, it seems that we can only make either a French omelette or a potato omelette, surely these two come to mind for most of us.
What we don't know is that with a little imagination and just by opening the fridge we can turn our tortilla.
Do not miss this stuffed tortilla because we are sure you will love it.
Ingredients:
- 2 eggs L
- Ricotta
- Canons
- arugula
- dried tomato
- Purple Onion
- Avocado
- Cilantro
- extra virgin olive oil
- Salt
Preparation:
- The best thing to start preparing our tortilla is to have the mice en place ready. That is, all the ingredients ready to be incorporated into the tortilla.
- Chop the dried tomato and reserve it. Cut the avocado into strips and reserve it. Julienne a little onion and cut the fresh coriander leaves.
- In a 24 cm Titanium frying pan , pour a splash of extra virgin olive oil.
- Beat the eggs and add a pinch of salt. Next, pour the eggs into the pan over medium-low heat. No need to stir, just let it cook underneath. When we see that it is almost completely curdled (although this will depend on your taste) we add the rest of the ingredients.
- It is important to pour the ingredients only in one half of the tortilla. We start by adding several points of ricotta cheese (it could be cream cheese), then we add the lamb's lettuce and arugula, the red onion, the dried tomato and the avocado.
- We turn the half tortilla on top of the filling and we have it ready. We put a little fresh coriander on top and eat. This tortilla is ideal for breakfast, for a mid-morning brunch or for dinner, although if we think about it, it is so delicious that we would eat it at all hours.
