Ricotta and lemon risotto, video recipe
The Risotto It is one of the most typical dishes of the Italian cuisine, it can be prepared in countless ways, with mushrooms, saffron, pumpkin, different types of vegetables, cheese... the one we are showing you today is made from ricotta , a cheese that is made from the drained whey of cheeses such as mozarella, provolone and other varieties, if you cannot find it in your usual supermarket, you can prepare it yourself as our friends from Straight to the Palate here .
Ideally, do the risotto with a special type of rice , round grain with a lot of starch, which during cooking loosens and makes the risotto creamy. Some of these special rices are the type Arborio , the Carnaroli or even the Vialone Nano; although you can use any coarse grain rice.
Ingredients
For 4 people:
- 25g butter
- 100g onion
- 2 garlic cloves, minced
- 70 ml dry white wine
- 400g rice
- 1 and 1/2 liters of hot chicken broth
- 30 ml lemon juice
- 2 tablespoons lemon zest
- 40g Parmesan cheese
- 200g ricotta cheese
- 30ml olive oil
- 1 tablespoon minced chili
