Galician quesada with honey and walnuts
Today's recipe is a traditional Galician cheesecake, a quesada made with cottage cheese and accompanied with honey and walnuts, a soft and delicate cake.
Ingredients:
24 cm / 8-10 servings

500g cottage cheese
200ml whole milk
3 eggs L
50 g of ointment point butter.
120g sugar
100 g of pastry flour
Zest of 1 lemon
1 teaspoon ground cinnamon
Honey
Walnuts
Preparation:
In an EFFICIENT bowl, crack the eggs and beat them together with the sugar. Then we grate the lemon that we have previously washed well, be careful to only grate the yellow part and add it to the eggs together with the pomade butter. Beat for a minute until all the ingredients are well integrated.
Then add the cottage cheese and beat for 1 more minute. If you don't want to find bits of cottage cheese, we recommend grinding with a hand mixer, although we prefer to find bits of cottage cheese. At this point we incorporate the sifted flour together with the ground cinnamon, beat until everything is well integrated.
Preheat the oven to 200ºC.
Finally, pour in the milk and beat for a minute or two until a smooth dough is obtained.
We pour the dough into our 24cm MARKET frying pan without the need to apply release spray or butter or flour. Remove the mango and put it in the oven and bake for 45 minutes at 190ºC heat up-down. Prick with a toothpick in the center to check that it is curdled, let cool and reserve in the fridge until the next day.
We serve accompanied by honey and nuts.
