There are many chicken curry recipes , some more sweet and sour, others spicy, others with coconut milk... The one we are showing you today is a very simple one to make but very very tasty and soft on the palate.
We learned this recipe in one of the workshops organized by BRA in Cookiteca and we liked it so much that we have not stopped making it at home. Here it is:
For 4 people:
4 carrots
2 medium onions
1 apple
curry powder (we add 4 tablespoons, but it depends on your taste)
1 bottle of coconut milk
salt and pepper
extra virgin olive oil
Cut the onion into julienne strips and put it in our frying pan or low saucepan with a little olive oil, sauté for a couple of minutes.
Add the finely diced carrot and sauté for about ten minutes.
Meanwhile, cut the apple into cubes and add it to the carrot and onion.
Let them cook for about 10-15 minutes and add the curry together with the coconut milk, season with salt and pepper.
We pass through a blender and grind everything well.
Return to the pan and add the chicken. Cook until done inside.
We serve accompanied by white rice.
If you want to give it a spicy touch you can add a small chopped chilli.
