Flamenquines from Cordoba, video recipe
Flamenquines are a typical Andalusian tapa, very popular in the bars of Córdoba, Jaén and Seville. It is a dish with many variants, very easy and quick to make, whose success lies in the quality of the ingredients. I suggest you do it with Iberian pork tenderloin and Iberian shoulder. It is usually accompanied with French fries, lettuce and mayonnaise. The version I make is one of the simplest, with the shoulder as the only filling. As a variation, I give it a different presentation than the traditional one and I dress the mayonnaise with Ras el Hanout. Ras el Hanout is a mixture of Arabic spices, if you can't find it, you can perfectly substitute it for curry.
Ingredients
For 2-4 people:
- 1 Iberian pork tenderloin
- 8-12 slices of Iberian shoulder (cut very thin)
- Wheat flour
- I beaten egg
- Bread crumbs
- extra virgin olive oil
- Salt
For the mayonnaise:
- 1 organic egg
- Arbequina variety extra virgin olive oil
- Lemon juice (to taste)
- 1 teaspoon Ras el Hanout
- Salt
For the garnish:
- 1 large potato, sour variety
- Assorted lettuce leaves
- Balsamic vinegar
- extra virgin olive oil
- Salt
