Sunday Fideuá
SUNDAY FIDEUÁ
This fideuá will delight you on Sundays or any day of the week you prefer. It is very easy to prepare and you can add mussels or clams and even a few pieces of fish.
Ingredients:
240g noodles
500 ml of broth
3 squid
8 shrimp
1 chopped onion
1/2 chopped green pepper
½ chopped red pepper
2 ripe tomatoes, grated
½ teaspoon ñora paste
3 tablespoons extra virgin olive oil
A pinch of salt
PREPARATION:
For the broth:
6 shrimp heads
2 small tomatoes
1 onion cut into quarters
1 small leek
1 + 1/2 liters of water
For the broth, in a saucepan, sauté the shrimp shells with a tablespoon of oil, crushing the heads well with the help of a spoon. Add the vegetables and sauté for a couple of minutes. We add the water and leave it on medium heat for about 30 minutes. We strain and reserve.
In a Bra paella pan, toast the noodles in a little oil until toasted. We withdraw and reserve.
In the same paella pan, add a little oil and sauté the squid and its tentacles. When it is golden we remove.
Add the chopped garlic, chopped onion and peppers and sauté until soft. Add the grated tomato and the ñora paste. When the tomato is well poached, add the noodles, stir a few times and add the squid and hot broth.
Adjust the salt and let it cook over medium-high heat until the noodles are ready.
We finish with a little garlic and parsley mayonnaise.
