Ginger cake with chocolate
Nothing like having a good sponge cake at home these days with which to accompany our cold mornings and afternoons, those in which we feel like staying home and in which we always have some sweet craving.
A sponge cake with the flavor of Christmas thanks to the cinnamon, cloves, vanilla and ginger that give a unique flavor and aroma to our today's recipe.

Ingredients
2 large eggs at room temperature
200g sugar
120 ml of EVOO (extra virgin olive oil)
80g of milk
2 teaspoons vanilla extract
1 teaspoon of cinnamon
A pinch of ground cloves
One teaspoon of ground ginger
220g white spelled or wheat flour
1 and a half teaspoons baking powder
A pinch of salt
For the sauce:
200 ml of cream
150g chopped dark chocolate
Preparation:
We preheat the oven to 180 degrees. We grease a low efficient saucepan of 20 cm.
In a bowl, beat the eggs at high speed with the help of an electric mixer for a couple of minutes.
Add the sugar and beat again on high speed for 3 minutes.
Add the oil and when it is mixed, add the milk, and the spices and beat at medium speed until well combined.
In a bowl mix the flour, yeast and salt. and add little by little. Mix well and pour over our low pan and bake for about 40-50 minutes until when you prick the center with a toothpick, it comes out clean.
Meanwhile, chop the chocolate into small pieces with a Bra knife and put them in a bowl. In an efficient saucepan, heat the cream. When it starts to boil, pour it over the chopped chocolate and wait a couple of minutes.
After this time, we move well until all the chocolate has dissolved. Serve a piece of sponge cake with a little of the chocolate sauce.
