Natural cockles
Surely most of you are crazy about cans of natural cockles and we are also sure that you don't buy them whenever you want because their price is crazy. Well, we bring you the recipe that will allow you to eat cockles whenever you want, much tastier and very economical.

Ingredients:
1 kg fresh cockles
Cold water
coarse salt
For the sauce:
150 ml white wine vinegar
25 ml sherry vinegar
Juice of 1/2 lemon
1 teaspoon ground cumin
4 g sweet or hot paprika
1 teaspoon black pepper
1 teaspoon salt
Preparation:
The first thing we must do is “deburr” them. To do this we are going to add 35 g of coarse salt for each liter of cold water. We stir a little and add the cockles. We reserve in the refrigerator for 1 hour. We have to do this process a couple more times, changing the water and salt every hour.
Once clean we are going to steam them. Pour 150 ml of water into the bottom of the steamer, turn on the heat and when it starts to boil, add a handful of cockles. We cover and let them cook for 4 minutes. And so on, with patience, until they are all cooked. We discard those that have not been opened. And the rest we remove the cockle from the shell, put them in a container and cover with the water they have released so that they do not dry out. We can keep them in the refrigerator for 2-3 days or freeze them with the liquid and everything.
For the appetizer sauce we need a bottle or a jar with a lid, add all the ingredients and shake well. We can store it in the refrigerator for several weeks.
